Wilderness Trail is barreling about 250 barrels of new whiskey a day. Part of what makes their product so unique and delicious, is the Sweet Mash process that they are using. They begin with an entirely fresh “batch” each time. By not acidifying the mash, they produce a more flavorful and softer product. The whiskey goes into the barrel, after being cut with pure Kentucky limestone water, at a low proof of 100 Proof for the Rye. This adds to the complex flavors and great texture of each whiskey.

Nose: Toffee, apricot, vanilla, orange peel, cola, sweet oak, barrel char

Taste: Caramel, candied ginger, orange and nutmeg

Finish: Long and sweet. Really coats the tongue. Baking spices, rye spice and pepper.

Alcohol: 52.55%/105.10 Proof
